Crawfish Pie

Ok folks. You got the Jambalaya, you got the File' Gumbo. Now in order to complete the song we need the Crawfish Pie. Well I think it's about time I gave it to you. After all how can you sing a good old Cajun song without all the ingredents. Now you can sing your lil heart away. You may be asking what song am I talking about, well " Jambalaya" Is there any other. Crawfish Pie is not a dessert like apple pie or something like that. This is the main dish, you'll have to find something else for dessert, Like a good ol blackberry pie. Crawfish Pie is like I said the main dish at any meal. Cajun's make this dish for special occasions like weddings, or most any kind of Cajun social affair. It is a favorite among the Cajun's of south Louisiana just like the song is a favorite also. So I hope you will take time to try this old time favorite. I know you will just love it.

You will Need

  • A cup or so of roux.
  • 2 or so cups chopped onions .
  • Water: 4 cups or so.
  • 1 cup or so chopped bell pepper.
  • 2 Lbs of chopped crawfish tail meat.
  • 2 to 3 cloves chopped garlic.
  • 1/4 cup chopped green onion tops.
  • 1/4 cup chopped fresh parsley.
  • 2 or 3 tablespoons cornstarch.
  • Crazy Cajun Seasoning Mix As much as you want to use.
  • 2 or so cups cooked, cooled rice.
  • Pie shell top and bottom.

You will have to have a roux made and ready to go. If you dont know how to make a roux then shame on you. Or just go back to the recipe page and look up how to make one. You will need about a cup of roux. To the roux, add the onions, bell peppers, and garlic, cook till transparent or limp. Add water slowly to this mixture , stiring well, and slow boil for about 10 minutes. Now add the crawfish tail meat, the green onions and the parsley. Season to tast, and cook on a medium heat for about 20 minutes or so. Add the corn starch, which has been dissolved in warm water. Stir and mix real good, be sure all is blended well. Now you can add the cooked and cooled rice to this mixture. Be sure to mix thoroughly. Pour into the unbaked pie shell, place the top crust on and cut several slits in the top crust. Bake at 350 degrees for 20 to 30 minutes or till golden brown and serve hot.

Now if you have a wedding to go to or any other type of social function you will have a dish that others will rave about. And to tell the truth it is not that hard to make now is it.
